Low-Fat Cajun Red Bean and Rice
If you are looking to add some Cajun taste to your lunch, then look no further than this bowl of awesome. When it comes to unique, yet low-fat recipes, this Cajun Red Bean and Rice is where it is at. Its Cajun seasoning, garlic, and hot sauce bring an exciting flair to the red kidney beans. And not only has that, but the recipe only had 210 calories, including only 6 grams of fat! It has bean far too long since we have had a low fat recipe like this!
Ingredients:
1 796 ml can of red kidney beans, drained
1 cup of vegetable or chicken stock
1 tbsp of vegetable oil
1 small onion, diced (about 1/2 cup)
1 clove of garlic (minced)
1/2 tsp of salt
1/2 cup of long grain brown rice
1 stalk of celery (diced)
1 tbsp of Cajun seasoning
1 thinly sliced green onion
1 bell pepper (diced)
1 tsp hot sauce (we recommend our Sauce No. 10 or Sauce No. 23)
Instructions:
First, heat the oil (medium high) in a Dutch oven or large saucepan. Then add the celery, garlic, bell pepper, and onion. Cook it for roughly 3 minutes, (until the vegetables are softening). Next, add Cajun seasoning and salt and stir until fragrant (this should take about 2 minutes). Then Stir in the beans, stock, and rice. Bring it to boil, then reduce the heat to low, cover, and simmer for 12-15 minutes until the rice is cooked and the liquid is absorbed. Finally stir in the hot sauce and serve it hot. As a final touch, garnish it with green onion and Bon Appétit! Your Cajun Red Bean and Rice is ready to go!
